Carrot Mash

Carrot Mash

Ingredients:
-6 small carrots, sliced

-2 tsp honey

-1 tsp dried thyme

-1/4 tsp salt


Directions:
1. Place carrots in a medium microwave-safe bowl. Add 3 tablespoons of water (1 tablespoon per cup of carrots).

2. Place a microwave-safe plate on top of the bowl. Cook in the microwave on high for 3 minutes. Let stand for 1 minute. Use an oven mitt or towel to remove the bowl and plate from the microwave. Test the carrots for doneness by inserting a fork into them. If you want them to be softer, place the plate back on top of the bowl and cook for another minute in the microwave. Let them stand for 1 minute, then test for doneness again. Repeat as needed.

3. Drain the carrots. Put carrots in a blender. and blend until smooth. Mix together the honey, thyme, and salt. mix the carrots with the seasonings.
