Old Fashioned Peach Cobbler

Ingredients:

- ¼ cup unsalted butter

- 1 cup monk fruit sugar, divided

- 6 fresh peaches, peeled and sliced

- 1 tablespoon lemon juice

- 1 cup all-purpose flour

- 1 tablespoon baking powder

- ¼ teaspoon salt

- 1 cup milk


Directions:

1. Preheat your oven to 375° Fahrenheit.

2. Melt the butter in a 9- x 9-inch baking dish.

3. While the butter is melting, bring ¼ cup sugar, peach slices, and lemon juice to a boil over high heat. Stir constantly until the sugar dissolves and the juice is extracted from the peaches (about 5 minutes). Set aside.

4. In a stand mixer, combine the flour, ¾ cup sugar, baking powder, and salt. Add the milk and stir just until the dry ingredients are moistened. Pour the batter over the hot butter pan (don’t stir). Then, pour the peach mixture over the batter (don’t stir).

5. Bake at 375° Fahrenheit for 30 minutes or until the cobbler is golden brown. Serve warm or cool, whichever you prefer!
