Pumpkin Soup

Ingredients:

-6 cups pumpkin puré

-1 large yellow onion, chopped
-4 large or 6 medium garlic cloves, pressed or minced

-½ teaspoon sea salt
-½ teaspoon ground cinnamon
-½ teaspoon ground nutmeg

-⅛ teaspoon cloves

-Tiny dash of cayenne pepper (optional, if you like spice)

-Freshly ground black pepper

-4 cups (32 ounces) Chicken broth

-1 cup water

-½ cup half and half

-2 tablespoons maple syrup or honey




Directions:
1. Place the pumpkin, onion, garlic, broth and water in a pot. Cover. Bring to a boil, uncovered, then reduce heat and let simmer rapidly for about 10 minutes.

2. Remove from heat and use a blender or food processor to blend until smooth.

3. Add cinnamon, nutmeg, cloves, cayenne.Season to taste with salt and pepper, stir through cream (never boil soup after adding cream, cream will split). and honey.

4. Ladle soup into bowls. sprinkle with pepper and parsley if desired. Serve with crusty bread and 1oz of any fancy cheese you love!
