
Secret Tomato Soup

Ingredients:
- 2 tsp olive oil
- 3 minced garlic cloves
- 3 cups low-sodium chicken broth
- 3/4 tsp salt
- 6 cups diced plum or Roma tomatoes
- 2 cups thinly sliced fresh basil leaves
Directions:
1. Heat the oil in a large skillet over medium heat. Add the garlic and cook for 30 seconds, stirring constantly. Add the diced tomatoes and cook for about 2 minutes. Mix in the broth, salt, and tomatoes. Bring the soup to a boil. Reduce the heat to simmer and cook for 20 minutes. Stir in the sliced basil.
2. Place half of the soup in a food processor and blend until smooth. Pour the pureed soup into a bowl and repeat with the other half of the soup.
3. Serve the soup with basil leaves, croutons, cheese, pepper, and salt to taste.
