
Spicy Goat Cheese Balls

Ingredients:
- 8 ounces of softened goat cheese
- 2 tablespoons of diced pickled jalapeños
- 1/2 teaspoon of black pepper
- 1 teaspoon of salt
- 6 eggs
- 1 1/2 cups of dried breadcrumbs
- 2 cups of canola oil
Directions:
1. In a small bowl, mix the goat cheese and jalapeños until they’re well combined. Shape the mixture into 10 small balls.
2. Sprinkle each ball with a teaspoon of salt and pepper.
3. In a separate bowl, whisk together the eggs.
4. Place the breadcrumbs in another bowl.
5. Dip each cheese ball into the egg and then roll it in the breadcrumbs.
6. Repeat the process by redipping each ball in the egg and then rolling it a second time in breadcrumbs. This double dipping helps keep the goat cheese from oozing out.
7. Place the balls on a parchment-lined plate.
8. Cover the plate and refrigerate for about 12 hours or freeze them for 30 minutes.
9. Heat the canola oil in a medium saucepan over medium-high heat. The oil should be about 1.5-2 inches deep.
10. Work in batches, carefully adding a few cheese balls to the oil. Cook until golden brown, turning often, about 3-4 minutes.
11. Drain the balls on paper towels and repeat the process with the rest of the balls.
