Taco Bake

Ingredients:

- 6-8 small flour tortillas (I use homemade)

- 1 pound ground beef

- 1 pound chorizo

- 1 taco seasoning pack

- 1 small onion, diced

- 1/2 green pepper, diced

- 2 cups enchilada sauce (I use homemade)

- 2 cups Mexican cheese (I use cotija)



Directions:

1. Preheat the oven to 350°F. Heat a skillet over medium-high heat and add oil. When the oil is hot, add the onion and green pepper. Cook until the onion is translucent, about 3-5 minutes. Put the onions and green peppers in a bowl and set aside.


2. In a large bowl, combine the chorizo and beef. When combined, add the mixture to the hot skillet over medium-high heat and cook until the meat is no longer pink. Stir frequently. Take about 5-8 minutes. When done cooking, add the onions and green peppers to the meat and mix. Remove the skillet from the heat and set aside for assembly.


3. In a 13x9 baking dish, layer some enchilada sauce on the bottom with a spoon. Add a layer of meat. Then add a layer of cheese. Add the tortillas on top of the cheese, breaking them up to fit evenly. Repeat another layer of each: sauce, meat, cheese, tortillas. The last layer should be sauce, meat, and then pour the rest of the enchilada sauce over the taco bake. Top with cheese.


4. Place the taco bake in the oven and bake for 20 minutes. Remove from the oven and serve.
